Paleo Chicken Adobo

2 Tbsp. lard/bacon fat or tallow
4 pounds chicken thighs
3/4 cup apple cider vinegar
3/4 cup coconut aminos
6 cloves garlic, crushed
1 Tbsp. raw honey
10 black peppercorns
5 bay leaves
1 cup chicken broth (optional)
